Are tags (artist, album) kept?

No, metadata tags and cover art aren't transferred. Re-tag the MP3s with a music manager if you need them.

Are my audio files uploaded anywhere?

No. Decoding, editing and encoding all happen inside your browser tab. Nothing is sent to a server, and closing the tab discards everything you haven't downloaded.
